Coconut Bread

INGREDIENTS:

THE BREAD DOUGH:

  • 1/2 Cup milk

  • 3 Tbsp butter

  • 1 egg

  • 1 Tbsp active active driy yeast

  • 2 Tbsp sugar

  • 2 Cup of All Purpose Flour

  • 1/4 tsp salt


THE FILLING:

  • 1 egg

  • 4 Tbsp sugar (more or less to taste)

  • 1/2 Cup butter (softened)

  • 1/2 Cup coconut flakes


THE TOPPING:

  • 3 Tbsp cake flour

  • 3 Tbsp pwder sugar

  • 3 Tbsp melted butter



DIRECTIONS:

  1. In the bread machine, add all the Dough ingredients in order above. Set to Program 8 Dough for 1:15

  2. Make a Filling: combining all the filling ingredients in a bowl. Set aside.

  3. Make a Topping: combining all the topping ingredients in a bowl. and transfer to pipping bag or small zip top bag with a small corner cut off. Set aside.

  4. After the bread dough is done, transfer the dough to cutting board and flatten to rectangular shape. Spread the Filling onto 2/3 of the dough, and fold in the non filling side to the middle, then fold in the filling side to the middle to form 3 layers. Cut the dough into 6 pieces. (you can seal and shape to a bun or twisted the dough to any shape)

  5. Transfer the buns to a parchment-lined baking sheet and cover with a clean kitchen towel. Allow to rise for another 45 minutes to an hour.

  6. Pre-heat your oven to 350 degrees.

  7. Once the buns have risen, brush with egg wash. Pipe two stripes of Topping onto each bun.

  8. Bake for 18-20 minutes until golden brown.


Note: cover lightly with aluminum foil to prevent from burning. Also, you can skip the Topping and it is still delicious without it.
